Juicy chicken breast is a difficult thing to manage, but this recipe takes the cake on making flavor packed chicken that’s also juicy!  Modified from this recipe I found, it is healthier than the counterpart, but just as tasty!

I’m sure you all have noticed how much of a love of chicken I have.  It is so versatile and can be made to taste so different even if you have it twice a day.  I love this recipe because it brings something new to chicken and makes the breast super juicy!  (We all know how hard it is to maintain juicy chicken breast!)

The original recipe calls for mayonnaise, but I have that substituted here for Greek yogurt and you won’t miss a thing!  I like to use plain yogurt, but I bet if you want to get a little wild, you could use a flavored yogurt to give a new tang to the recipe!

This chicken is packed with flavor and can be made with chicken breast or chicken tenders.  This time around I made it with chicken tenders.  Be sure to remove the skin/filmy part on the chicken tender that way you don’t chomp on something chewy.  I also like to use fat free yogurt here, but you can use what ever fat content yogurt you desire.

Garlic Parmesan Chicken

Yield: 3 chicken breasts

Serving Size: 1/2 breast

Ingredients

  • 3 Chicken Breasts
  • 1/2 cup plain Greek Yogurt
  • 1/2 cup shredded parmesan cheese
  • Garlic Salt/Garlic powder
  • Italian seasoned bread crumbs
  • parsley

Instructions

  1. Preheat oven to 400 degrees.
  2. Place chicken on a baking sheet/pan and sprinkle garlic salt on each.
  3. Mix the yogurt and the cheese in a bowl. Split the mixture evenly on each breast.
  4. Bake for 20 minutes.
  5. Remove from the oven and sprinkle the bread crumbs onto the breasts. You'll need about a teaspoon of crumbs per breast. Sprinkle with dried parsley.
  6. Bake for 20 minutes or until chicken is cooked through.
